LEEK AND PANCETTA TARTA BY APA




This is a recipe that was done and passed to me by my friend Apa aka Ana Paula.


INGREDIENTS


For the dough:300 g of flour
150 g of butter
1/4 tsp of salt
Iced cold water

For the filling:1 kg of leeks
150 g smoked pancetta
50 g of butter
4 eggs
200 cc of heavy whipping cream
150 g Parmesan cheese
Salt and Pepper

PREPARATION
Sprinkle flour and salt on top of the butter. Pour a little of iced cold water, form into a smooth dough and let it rest in the fridge for 30 minutes.
Spread it thin and place over a 11 inches round pan.
Pinch the bottom with the fork and cook for 10 minutes in at 300 degrees.

Chop the leeks in thin slices and saute in butter. 
Add the pancetta in cubes or strips (however you get i at the storem Trader Joe's sells it cubed)
Saute all together for a few minutes. Take off from the stove.
In a bowl whisk the eggs with the heavy whipping cream, add the Parm cheese and the leeks and pancetta. 
Add salt and pepper and mix well. 
Pour into the pre cooked cough and cook for 35 minutes at 315 degrees.
