Hi all, how are you? I hope you're doing amazing! I have been a bit MIA lately because having a baby takes a lot of time lol, especially with a 3 year old. AND for some reason, I have been leaning more towards Instagram and youtube (did you know I have a youtube channel?), probably because I can do it all from my phone while I breastfeed or put the babies to sleep.
But that doesn't mean that I don't still love cooking and baking and sharing a little bit of Latin American flavors, and this time, with the help of Coca-Cola and Walmart, I've created a delicious (but a bit messy, you'll see) Vanilla Dulce de Leche and White Chocolate Pound Cake! You can have it in the afternoon, at night for a sweet treat (my guilty pleasure is a Coke Zero Caffeine Free and something sweet before bed) or to bring to a Holiday Potluck like we are doing today.
This evening our Home Fellowship Group is having a Christmas Potluck and we're bringing this decadent pound cake and a 2 litter bottle of Coke Zero Caffeine Free (we don't want to take anyone's sleep).
Coca-Cola is coming together with the non-profit organization One Warm Coat, and their goal is to gather half a million coats this holiday seasons for those in need. All we have to do is go through our closet and check if we have a warm coat we don't wear and give it to those in need while encouraging others to do the same! #LayerOnLove.
Now on to the recipe!
For the pound cake:
2 cups sugar*
1cup butter, softened
2 teaspoons vanilla*
3 cups flour*
1 teaspoon baking powder*
1 cup milk
For the frosting:
1 can of dulce de leche (found in the Hispanic aisle of Walmart and most stores)
1 bar of baking white chocolate*
1/2 a stick of butter
*found on the Baking aisle of Walmart and most stores.
Heat oven to 350° F.
Mix sugar, butter, eggs and vanilla in large bowl.
Beat on low to mix ingredients well and then on high for 5 minutes, or get a good workout if doing by hand.
On low, add flour and baking powder with milk alternating.
Beat well after you add each ingredient.
Pour batter into greased and floured 10 inch tube pan.
Bake for 65-75 minutes, until a pick comes out clean.
Cool for 15 minutes; invert onto cake plate.
Cool off 30 minutes more before putting frosting.
For the frosting:
Melt the chocolate with the butter in a water bath until completely melted. Let cool for 20 minutes to it's easier to apply.
Melt dulce de leche for 1 minute.
Frost the cake with the white chocolate and then pour the dulce de leche on top.
Disclaimer: you could leave the dulce de leche part until you need to serve. It will get gooey but it's absolutely delicious!
